I first learned how to make acorn flour from TheCupcakeProject last fall and I of course ran out and gathered as many acorns as I could find, and finally finished cracking and grinding my acorns into flour. Acorn flour is something that’s fun to make and even more fun to use. These cookies taste great, are frugal, and are quite healthy.
3/4 cup acorn flour (next time I’ll try 1 cup acorn flour + 1/4 cup oat flour)
1/2 cup oat flour (ground oats)
1/2 cup chocolate chips
1/4 cup honey or maple syrup
1/2 vanilla bean, ground + 2 tsp. vanilla extract or 11/2 Tbsp. vanilla extract
1/2 tsp. vanilla stevia extract or extra honey
1/4 melted butter or coconut oil
11/2 Tbsp. nut butter
1/2 tsp. baking soda
Preheat oven to 400 degrees and grease a cookie sheet. Mix together oat flour, acorn flour, vanilla bean, and baking soda. Add egg, butter, stevia, nut butter, chocolate chips, and honey. Spoon onto cookie sheets and bake for about 10 minutes.
